How to create your own map from recorded GPS tracks?

Hello,
i live in a place where many trails are not marked on the map.
Now I want to follow all these trails and record them with GPS.

From these recorded trails I want to create a map. So the trails should be integrated into the map.

It should also be possible to rate the different trails by difficulty, either with a different line type or with letters (S0,S1,S2,...)

What is the easiest way to do this? Do I need special software or is there even an app for it?

Can I use an existing map and simply add the missing trails?
Please forgive my naivety, I'm still quite a beginner in the field of mapmaking.  :)

The proper way is to update the map database on the https://openstreetmap.org  ( OSM )
via their online editors or extra OSM editing applications like JOSM (java) or Vespucci (Android).

The very important thing is being compliant with their  site and data policy.

This would provide map update available for any map application using OSM data.

If you want to create your own private maps, it is possible, but much more complicated. For this, I would rather recommend to stay with trails being recorded tracks, independent on the map.
