A few points to add:
1. Locus offers resolution-independent scaling for symbols in themes already, if one defines the height in "dp" units, for example:
symbol-height="14dp" scale-icon-size="16,1.25"
This sets the height of the symbol in resolution-independent units, and then scales the symbol by a factor of 1.25 for every zoom level above 16.
The dp notation can also be done for widths of lines etc. I have done this in my Voluntary theme.

2. Overall adjustment of the scaling of the map can be used to adjust for individual preferences, using Settings | Map - advanced | Miscellaneous: Increase map resolution. The obvious drawback of this is that it also increases the width of roads and size of text, although the text size can be fine-tuned in Settings | Map - advanced | Vector maps: Text size. However...

3. Even though the map has been upscaled, Locus does not scale the POI overlay symbols for points from its (beta) database and a standard size symbol overlays a bigger one, which is unnecessarily ugly. Request to menion: please sort this!

4. It would be much easier if there was an option in Map-advanced to set a scale for symbols on vector maps. Orux maps does it. It's not the first time someone has asked about this. Request to menion: please add this feature.

The issue with .osm appearing in the names of offline maps has not yet been fixed in this release.

An extra .osm has crept into the display of offline map names and points database names in the latest beta (see below). The filenames seem to still require the .osm in them.

Why not use BRouter in Locus? Doesn't that solve most of the issues? Choose the map display you want, turn on map shading, set on the fly height data at the cursor...

Gynta's answer allows you to download gpx files of routes and then import them into Locus, which is fine and gives you the opportunity to edit the display of individual trails.
What I had in mind was downloading a map or route area:
Menu > Maps > Online > Overlay Trails > [Hiking Trails] ... > Download etc
And then in the download dialogue, under Advanced / Download type select from Personal map, Cached map etc according to how you want to work it.

Doing it this way, you are limited to what waymarkedtrails.org provide. I think you are heading towards customising Elevate by selecting only the items you want to show, and possibly tweaking the colours in the XML.
I believe you can download areas of the way marked trails overlay you want offline, or alternatively rely on caching if you have viewed the section previously.

The trail colours are hard coded in waymarkedtrails.org and differ according to the type of trail. Local trails appear at higher zooms.
As for federal borders, I can only suggest Elevate theme and make sure "borders + special areas" is among the features selected.

You could of course use a theme which is geared to hiking trails, such as Elevate from the OpenAndroMaps site: http://www.openandromaps.org/en/legend/elevate-mountain-hike-theme where you can turn on or off the features you want.

Or you can get trail overlays by copying the two attached files to your Locus/mapsonline/custom directory. Then in Locus:
Menu > More Functions > Map Tools: Map overlays and select the (online) overlay you want.

I believe that the Foursquare venues add-on no longer works (possibly since 2014) and should be removed from the list of add-ons. Foursquare itself has changed totally.

Just to say I do not like the new monochrome icons, particularly in the Settings menu where so many seem the same, even the ones that are different.

@Christian: You write that you have used BRouter web. Have you used BRouter as a navigation engine in Locus? I really think it will do what you want -- and in Locus, as you ask?

You could still have it in Locus because Brouter integrates very well with Locus.

That refers to the GraphHopper Maps web engine which runs in speed-up mode.
GraphHopper itself includes the possibility of turn costs and turn restrictions but requires turn costs to be turned on:

In the graphs I use which I prepare using Atlas, turn costs are on for car routes and off for bike or foot. As far as I can tell, the same is true for the graphs menion has prepared and made available (though I only checked Gibraltar).
